Dry Ingredients
1 cup all-purpose flour
1 cup whole wheat flour
1 tablespoon baking powder
1 teaspoon Italian seasoning
½ teaspoon garlic powder
½ teaspoon onion powder
¼ teaspoon salt
Wet Ingredients
2 large eggs
1 cup milk
¼ cup olive oil
½ cup pizza sauce
Mix-Ins
1 cup finely grated zucchini, squeezed dry
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
¾ cup mini pepperoni, chopped
Directions
Step 1
Preheat oven to 375°F (190°C).
Lightly grease a 24-cup mini muffin pan or line with silicone muffin liners.
Step 2
In a large mixing bowl, whisk together the flour, whole wheat flour, baking powder, Italian seasoning, garlic powder, onion powder, and salt.
Step 3
In a separate bowl, whisk together the eggs, milk, olive oil, and pizza sauce.
Step 4
Pour the wet ingredients into the dry ingredients and stir until just combined.
Do not overmix.
Step 5
Fold in the zucchini, mozzarella cheese, Parmesan cheese, and chopped pepperoni.

Fill each muffin cup about three-quarters full.

Bake for 13–15 minutes or until golden brown and a toothpick inserted into the center comes out clean.
